Healthy-ish Sourdough Donut Holes

One thing about sourdough baking is that you’re going to end up with a lot of sourdough “discard” if you keep your starter on the counter. For the first few weeks, I was keeping my starter on the counter and feeding it daily so I needed recipes to use up the discard I was storing in the fridge. Now that I’m keeping my starter in the fridge and baking once to twice a week, I don’t have as much, but still love making these donut holes when my toddler asks for them!

These sourdough donut holes are pillowy soft and delicious. They are easy to make and your kids will love them. Plus, everyone will get those gut-friendly and nutrition benefits that sourdough is known for.

Prep: 10 minutes

Bake: 15-18 minutes

Total: 30 minutes

Yield: 16 donut holes

Ingredients

Dry

1 cup of all-purpose flour (add up to ½ cup more if dough is too sticky)

1 ½ tsp baking powder

¼ tsp baking soda

Pinch of salt

2 tbsp white sugar

Wet

¾ cup plain Greek yogurt

½ cup sourdough discard

Cinnamon Sugar

2 tbsp butter

2 tsp ground cinnamon

4 tbsp white sugar

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, add the dry ingredients and whisk together. Use up to a ½ cup more of all-purpose flour as stated above, if needed.

Add the wet ingredients to the dry ingredients and mix together. TIP: Use a silicone spatula, wooden spoon, or Danish whisk to mix the wet ingredients with the dry ingredients.

After all ingredients are combined, flour your clean work surface.

Transfer your dough ball to the clean work surface and flour the top of the dough.

Knead the dough with your hands until it forms a smooth dough ball.

Using a bench scraper or sharp knife, cut the dough ball into equal parts. This recipe makes 16 donut holes.

Gently roll and pinch the bottom of each donut hole to form into a ball. TIP: Wet or flour your hands during this step so the dough doesn’t stick to your hands.

Line a baking sheet with parchment paper.

Place the dough balls onto the lined baking sheet, about half of an inch apart. TIP: Only bake one sheet of donut holes at a time. Baking more than one at a time will create an uneven bake.

Melt 2 tbsp of unsalted butter in the microwave or in a saucepan and brush the tops of the donut holes with the melted butter before baking.

Bake at 375°F (190°C) for 15-18 minutes.

While the donut holes are baking, mix the 2 tsp of ground cinnamon and 4 tbsp of white sugar together.

Once baked, brush the tops of the donut holes with more melted butter and dip the top of each into the cinnamon sugar mixture. (I said healthy-ISH, remember!?)

You can also top with sprinkles, icing, or another favorite topping.
